What’s Local This Week?
Even with this cold spring we have been having, we are back to including more local produce this week. The Kale was grown here in Nanaimo by the Growing Opportunities Farm team. Growing Opportunities is a wonderful team of urban farmers and volunteers dedicated to sharing agricultural skills, growing good food and supporting Nanaimo’s food system. They support the Good Food Box program by providing as much of our produce as possible through the year.
The peppers are also from BC and were grown in hothouses on the mainland.
Slowly but surely, more of the produce in the Good Food Box will be from closer to home as the season progresses.

Recipe
Brown Butter Kale Pasta
From inspiredtaste.net, this recipe is quick, easy & full of flavour!
Ingredients:
8 ounces dry pasta such as penne
⅓ cup of Raisins
3 cups of kale, tough stems removed
4 Tablespoons butter (not margarine!)
¼ Cup feta cheese, crumbled
Salt & pepper to taste
DIrections:
Bring a large pot of salted water to boil, add pasta and cook according to the directions on the package. When you have 3 minutes remaining, add the kale. Finish cooking together and then drain.
While the pasta is cooking, place the raisins in a small bowl and cover with boiling water. Set aside until the pasta has cooked.
Add butter to a wide pan over medium-low heat. As the butter melts, swirl it around the pan until it is light brown in colour and smells sweet and nutty. Remove from heat immediately (it will go from brown to burnt quickly, so keep a close eye on it and stir continuously).
Drain the raisins and add them to the brown butter. Add the pasta and kale. Toss well, and season with salt and pepper. Serve with feta cheese sprinkled on top.
