This Week On The Farm

Growing Opportunities is a wonderful team of urban farmers and volunteers dedicated to sharing agricultural skills, growing good food and supporting Nanaimo’s food system. They support the Good Food Box program by providing as much of our produce as possible through the year at discounted rates.

A morning without wind and lots of hands meant we could finally tackle the poly on our greenhouse! A big thanks goes out to Katimavik, Tsawalk Learning Centre, volunteers and our growing op crew for all the hard work. It will welcome our tender seedlings for a period of hardening off, time spent adjusting to cooler temperatures while they prepare for transplanting into the field. We also welcomed a new group from Foodshare’s Cultivating Abilities employment program & a full day of volunteers through Foodshare’s EAT (Everyone At the Table) program.

Preparing This Weeks Good Food

Dying Eggs With Food!!

Did you know you can use food scraps to make beautiful eggs? Follow the directions below to brew up some beauty this spring.

Step 1: Chop 1 cup of each “dye” ingredient (see below for ideas)

Step 2: Combine your dye ingredient with 1 cup of water in a saucepan. Bring to a boil and simmer with lid on for 15-30 minutes 

Step 3:  Strain the dye to remove the food ingredient

Step 4: Add 1 Tablespoon white vinegar

Step 5: Pour over your hard-boiled eggs, making sure they are fully covered. Place eggs in the dye in the fridge and chill for at least one hour (or longer if you can wait that long!)

Step 6: Carefully dry the eggs (or let them air dry) and admire their pretty colour! 

Dyes to try: Beet peels (makes a beautiful pink), Onion Skins (makes white eggs orange), the outer leaves of a purple cabbage (goes blue once you add the vinegar!). Or substitute 2 Tablespoons of powdered tumeric for the 1 cup of chopped veggies to make a bright yellow.

After you’ve hidden, found and admired your beautiful eggs, make egg salad by adding a bit of finely chopped onion, grated raw beet and a dollop of mayonnaise. Make a sandwich with your egg salad and a couple leaves of spinach for a Good Food spring treat!
